
Watermelon Salad

2 tbsp extra-virgin olive oil
3 tbsp fresh lime juice
½ garlic clove, minced
¼ tsp sea salt
For the salad
5 cups cubed watermelon
1 cup English cucumber, diced
¼ cup thinly sliced red onion
⅓ cup crumbled feta cheese
1 avocado, cubed
⅓ cup torn fresh mint leaves
½ jalapeno pepper, thinly sliced, optional
Dressing
2 tbsp extra-virgin olive oil

For the salad

Directions
1Dressing: In a small bowl whisk olive oil, fresh lime juice, garlic, and salt until combined.
2On a large platter, arrange the watermelon, cucumber and red onions. Drizzle with half the dressing. Top with feta, avocado, mint and jalapeno pepper.
3Drizzle with the remaining dressing. Season to taste.
