Commonly found in Southeast Asia, this chilled dessert drink features sago pearls (similar to, and interchangeable in this recipe with Tapioca pearls), chilled fresh watermelon cubes, coconut milk and jellies. Best eaten with a spoon, it’s jam-packed with fun – and perfect for summertime!

  • 3 cups watermelon, cubed

  • ⅓ cup small tapioca pearls

  • ½ cup coconut milk

  • 3 tbsp sugar, divided

  • ½ tsp cornstarch

  • ½ tsp vanilla

  • 2 tbsp lychee flavour coconut jelly (optional) (see note)

  • 2 tsp lime juice

  • Toppings

  • 1 cup cold watermelon, diced

  • Mint leaves, to taste

Coconut jelly is available in both supermarkets and specialty Asian grocery stores.
