Directions
1Pickled cucumbers: Slice 4 mini cucumbers into rounds and toss in a bowl with 1 tsp salt. Let sit for 15 mins. Drain and squeeze excess liquid. Set aside.
2Whipped Feta cheese: In a food processor, whip 8oz feta with 1/3 cup Greek yogurt, ¼ cup packed mint leaves, zest of one lemon, 1-2 Tbsp lemon juice, and 2 Tbsp olive oil.
3Burgers: Grill Compliments Sirloin Burgers according to package instructions. They are done when the burgers have reached an internal temperature of 71°C (160°F).
4Spread toasted burger bun with whipped lemon-mint feta. Top with grilled beef burger patty, a 1-in.-thick slice of watermelon, pickled cucumbers and second bun half.
