
Tropical Fruit Granita

1 cup chopped pineapple
3 tbsp water, divided
3 tbsp granulated sugar, divided
3 tsp lime juice, divided
1 cup chopped honeydew
1 cup chopped seedless watermelon
Compliments Mint sprigs, for garnish (optional)

Directions
1 Combine pineapple with 2 tbsp (30 mL) water, 1 tbsp (15 mL) sugar and 1 tsp (5 mL) lime juice in a blender or food processor. Blend until smooth. Pour into a small container.
2Combine honeydew with 1 tbsp (15 mL) water, 1 tbsp (15 mL) sugar and 1 tsp (5 mL) lime juice in same blender (no need to wash). Blend until smooth. Pour into a small container.
3Combine watermelon with 1 tbsp sugar (15 mL) and 1 tsp (5 mL) lime juice in same blender (no need to wash). Blend until smooth. Pour into a small container.
4Cover and freeze all fruit mixtures until frozen, 5 to 6 hr.
5Just before serving, remove frozen fruit from freezer and let stand at room temperature until surface is easy to scrape, about 5 mins. Scrape down length of container with a spoon, forming ice crystals. Layer different granitas into serving glasses. Garnish with mint. Serve immediately.
