Inspired by Thai desserts sold by street cart vendors, these homemade ice cream sandwiches pair cool coconut ice cream with coconut jelly, papaya and peanuts in a fluffy brioche bun topped with a sweetened condensed milk drizzle.

  • Sauce

  • ⅓ cup sweetened condensed milk

  • 1 lime, zest finely grated

  • ½ tsp lime juice

  • Sandwiches

  • 4 brioche hot dog buns

  • ¼ cup lychee flavour coconut jelly

  • ½ cup ripe papaya, diced (see note)

  • 1 cup vanilla or coconut ice cream

  • 3 tbsp unsweetened grated coconut, roasted

  • 3 tbsp roasted salted peanuts, coarsely chopped

Tips

Papaya can be replaced with the same quantity of canned jackfruit or lychees that have been drained and diced.
