
Peanut Butter S’mores Ice Cream Sandwiches

3 cups Compliments Peanut Butter & Chocolate Ice Cream, divided
8 double graham crackers, divided
1 cup semi-sweet chocolate chips
⅓ cup salted peanuts, chopped
4 large pretzels, broken into pieces

Directions
1Scoop and press ice cream onto a graham cracker square, top with another graham cracker square, pressing slightly. Fill sides with more ice cream to make clean edges. Freeze until firm.
2In a small microwave-safe bowl, melt chocolate over high heat in 30-second intervals. Stir to melt. Stir in enough vegetable oil until mixture easily drizzles, about 1 tsp.
3Dip the edge of the ice cream sandwich into the chocolate mixture and immediately press peanuts and pretzels to adhere.
