
Indian-Spiced Grilled Corn Ribs with Cucumber-Radish Raita

Inspired by the fire-roasted corn on the cob sold by street vendors in regions of India, these grilled corn ribs have a tangy, spicy finish from the chaat masala spice mix and a cooling finish with a drizzle or dip of yogurt raita.
Raita
1 cup 2% plain yogurt
2 Lebanese cucumbers, finely diced
2 radishes, finely diced
¼ cup cilantro leaves and stems, finely chopped, plus more leaves for serving
1 ½ tsp chaat masala (see note)
½ tsp ground cumin
1 pinch spicy chili powder, or more to taste
1 lime, zested and juiced
Corn Ribs
4 ears corn, husks, removed
⅓ cup butter
2 tsp chaat masala
½ tsp ground cumin
½ tsp spicy chili powder
1 lime, zested and cut into wedges
Raita
1 cup 2% plain yogurt
2 Lebanese cucumbers, finely diced

1 lime, zested and juiced
Corn Ribs
4 ears corn, husks, removed
⅓ cup butter
2 tsp chaat masala
½ tsp ground cumin
½ tsp spicy chili powder
1 lime, zested and cut into wedges
Directions
1To make raita: In a medium bowl, combine yogurt, cucumber, radish, cilantro, chaat masala, cumin, chili powder, lime zest and juice. Season with salt and pepper. Refrigerate until ready to serve.
2To make corn ribs: Preheat grill to medium-high. Clean and oil the grates.
3In a large pot of salted boiling water, cook the corn for 7 min. Drain. Let cool slightly and pat dry with paper towels. Using a sharp chef’s knife, cut each cob in half lengthwise. Place each half cut-side down, and slice into two long wedges.
4Place the corn ribs on the grill. Close the lid and grill for 10 to 15 min., turning over a few times during cooking until tender and nicely browned. Set aside in a large bowl.
5Meanwhile, in a small saucepan, melt the butter with the spices and lime zest. Season lightly with salt and pepper. Pour over the corn ribs in the bowl and toss to coat well.
6Transfer the corn ribs to a serving dish. Sprinkle with cilantro leaves. Serve with the lime wedges and raita.
Tips
1
Chaat Masala can be replaced with garam masala. Although garam masala has a different flavour profile, it will be just as delicious!
