
Cantaloupe Bingsu (Korean Shaved Ice Dessert)

Try this delicious Korean shaved ice dessert known as bingsu. Topped with ice cream mochi, this cantaloupe bingsu is the ultimate refreshing dessert.
2 cups 3.25% milk
¼ cup sweetened condensed milk
1 cup cantaloupe, peeled, seeded and scooped into small balls with a melon baller
1 cup cantaloupe, peeled, seeded and diced
½ cup frosted cornflake cereal
¼ cup unsweetened toasted coconut flakes
4 store-bought raspberry ice cream mochis, halved
2 cups 3.25% milk
¼ cup sweetened condensed milk
1 cup cantaloupe, peeled, seeded and scooped into small balls with a melon baller
1 cup cantaloupe, peeled, seeded and diced
½ cup frosted cornflake cereal
¼ cup unsweetened toasted coconut flakes
4 store-bought raspberry ice cream mochis, halved
Directions
1In a bowl, whisk together the 3.25% milk and sweetened condensed milk until smooth. Pour the mixture into 1-2 ice cube trays. Freeze for at least 4 hrs.
2Using a food processor, crush the milk ice cubes into a grainy texture.
3Divide the ice mixture among four wide 1 ½-cup (375 mL) glasses. Top with the cantaloupe. Sprinkle with the cereal and coconut flakes. Garnish each glass of bingsu with the mochi halves. Serve immediately.
