
Beef Kefta with Tabbouleh Bulgur Wheat Salad

Ground beef for tonight’s menu, but make it extra (delicious, we mean). These spiced beef kefta skewers are easy to put together, and when served with a tabbouleh bulgur wheat salad, make a delicious dinner plate.
Tabbouleh Bulgur Wheat Salad
¾ cup water
¼ tsp salt
¾ cup fine bulgur or medium couscous
2 plum tomatoes, diced
1 small red onion, finely chopped
1 ½ cups parsley leaves and stems, finely chopped, divided
3 tbsp mint leaves, finely chopped, divided
3 tbsp olive oil, plus more for oiling the kefta
1 lemon, juiced

2 garlic cloves, peeled
2 tsp sumac or 1 lemon, zest finely grated
1 tsp sweet paprika
½ tsp salt
½ tsp ground coriander
½ tsp ground cumin
½ tsp ground all spice
¼ tsp ground black pepper
¼ tsp ground cinnamon
1 ⅓ lb lean ground beef
Tabbouleh Bulgur Wheat Salad
¾ cup water
¼ tsp salt
¾ cup fine bulgur or medium couscous

1 ½ cups parsley leaves and stems, finely chopped, divided
3 tbsp mint leaves, finely chopped, divided
3 tbsp olive oil, plus more for oiling the kefta

Beef Kefta

Directions
1To make tabbouleh bulgur wheat salad: In a medium pot, bring the water and salt to a boil. Remove from the heat. Add the bulgur. Cover and let sit for 15 min. Fluff the grains of bulgur with a fork. Transfer to a bowl.
2Add tomatoes, half of the red onion, 1 cup parsley, 2 tbsp mint, oil and lemon juice to the bowl of bulgur. Season with salt and pepper. Mix well. Cover and refrigerate until ready to serve.
3To make beef kefta: Preheat the grill to high heat. Clean and oil the grate. Set bamboo skewers in water and soak, 30 min.
4In a food processor, finely chop the remaining red onion with the garlic cloves, remaining parsley and mint, and the spices.
5Add the ground beef to the food processor and mix well. Divide the mixture into 8 equal pieces. With lightly oiled hands, shape each piece into a sausage about 5-in. (12.5 cm) long, and press onto a wooden skewer. Set aside on a large plate, and brush keftas lightly with oil.
6Grill 7 to 8 min., turning the kefta over often, until the meat is cooked through.
7Serve the beef kefta and tabbouleh with hummus, pita and seasonal vegetables, if desired.
