Ground beef for tonight’s menu, but make it extra (delicious, we mean). These spiced beef kefta skewers are easy to put together, and when served with a tabbouleh bulgur wheat salad, make a delicious dinner plate.

  • Tabbouleh Bulgur Wheat Salad

  • ¾ cup water

  • ¼ tsp salt

  • ¾ cup fine bulgur or medium couscous

  • 2 plum tomatoes, diced

  • 1 small red onion, finely chopped

  • 1 ½ cups parsley leaves and stems, finely chopped, divided

  • 3 tbsp mint leaves, finely chopped, divided

  • 3 tbsp olive oil, plus more for oiling the kefta

  • 1 lemon, juiced

  • Beef Kefta

  • 2 garlic cloves, peeled

  • 2 tsp sumac or 1 lemon, zest finely grated

  • 1 tsp sweet paprika

  • ½ tsp salt

  • ½ tsp ground coriander

  • ½ tsp ground cumin

  • ½ tsp ground all spice

  • ¼ tsp ground black pepper

  • ¼ tsp ground cinnamon

  • 1 ⅓ lb lean ground beef
